Feast From the Sea€150

With the fishing village of Howth on our doorstep, we are spoilt for choice and resources here in Howth Castle Cookery School.  As a result our fish classes are very popular and this full day Feasts from the Sea class is our foundation class for learning all the basics when it comes to buying, preparing from scratch and cooking fish.

The morning starts with a trip to one of the local fishmongers on Howth pier where we go through the day’s display and talk through identifying the categories and varieties for sale and their origins.

We return to the Cookery School for coffee and get started with cooking lobster and preparing both flat and round fish from scratch. Using this fish, we will panfry, grill, steam Japanese style and cook en papiotte for lunch. We deal with mussels, clams, prawns and John Dory. You will learn to make mayonnaise and the best tartar sauce and fish goujons.  Sitting down for lunch with your fellow students for a well deserved meal and a glass wine, followed by a demonstration in the afternoon with a couple of extra dishes for your repertoire.
